Bruschetta

Bruscetta with tomatoes and rosemaryBruschetta is a baguette that is grilled and flavored with garlic. It is the base used for toppings.

You will need the following ingredients:

  1. baguette bread
  2. garlic infused olive oil
  3. dried oregano or Italian seasoning
  4. salt and pepper

Preheat broiler to high

Cut the bread into thin slices. Place on a baking sheet. Broil  until golden brown on one side, then turn and brown the second side. Remove from heat and brush on one side with garlic infused olive oil. Sprinkle with dried oregano, salt and pepper. Add your toppings of choice.

Garlic Infused Olive Oil

Combine 1/4 cup olive oil and 1 tbsp pureed minced garlic. Cover and let sit at room temperature for several hours. Strain to discard the garlic

Chickpea Bruschetta

Ingredients:

  • 1 tbsp olive oil
  • 1/2 red onion, finely chopped
  • 1/2 red bell pepper finely chopped
  • 4 cloves garlic, finely chopped
  • 2 cups cooked drained chickpeas
  • 2 tbsp chopped parsley
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice, salt and pepper

In a skillet, heat oil over medium heat. Add red onion, belle pepper and garlic and cook, stirring, until softened, about 3 minutes. Add chickpeas and cook, stirring, until heated through. Remove from heat. Using a potato masher, mash chickpeas

Stir in parsley, extra virgin olive oil and lemon juice. Season to taste with salt and pepper.

Spoon over bruschetta.
