Smoothie
Our in-house kosher catering chefs love a pick me up smoothie for afternoon snacks. The smoothies seem to revitalize them and give them a boost of energy. Working in a kosher kitchen is stressful and trying to satisfy our client’s expectations can be exhausting. The smoothies seem to be a prescription recommended for stress relief.
A recent addition to their recipe collection is the golden smoothie from Fine Cooking, the August/September, number 154.
Ingredients
Five ounces of carrot juice
One cup unsweetened coconut milk
One half of a large orange
Two coarsely chopped Medjool dates
One tablespoon of lemon juice
One and one-half teaspoon of grated ginger
One half teaspoon of ground turmeric
Ice cubes
Put the carrot juice and half of the coconut milk in a blender. Blend while slowly adding the remaining coconut milk, about twenty seconds, scraping down the blender as needed. Blend until smooth or only slightly coarse, about twenty seconds. Add the orange, dates, lemon juice, ginger and turmeric. Blend on low speed and slowly increase to high speed. Blend until smooth about thirty seconds. Add more coconut milk to get the right amount of consistency. Add the ice and blend on high speed to crush and incorporate. Should take about thirty seconds. Serve immediately.
Another addition from the same magazine is the mango pineapple smoothie
Ingredients
One and one quarter ounces of cashews
One half cup of unsweetened coconut milk
One cup of chopped mango
One cup of chopped pineapple
One cup of chopped bananas
One cup of orange juice
Soak one quarter cup of cashews in coconut milk overnight. Put the cashews and coconut milk, mango, pineapple, banana, and orange juice in blender. Pulse to break up the nuts and then increase the speed to high speed, blend until smooth, about one minute. Add orange according to your preference depending on what consistency you are partial to.
